Oh and I made cupcakes to have with dinner and I baked a variety of things in them from candy bars to ginger snaps. I think the gingersnaps were pretty cool but I think next time I will try layering two cookies!

Day Three Hundred and Thirteen
Today was a good day. I found out that my phone interview went well and I am scheduled to come in for an interview on Thursday with the team. I am super excited about this job. It is close enough I can ride my bike to work (around 3.5 miles) and it will be with a super cool team. It was also movie night with the Charters. We watch a variety of things before we settled on Sweeney Todd while eating teriyaki chicken and rice.

Day Three Hundred and Six
I made some yummy salted caramel brownies (I baked brownies with a salted caramel in the middle) that turned out awesome. I think that is my new desert thing, baking things inside of stuff. Next week I am going to make cupcakes with KitKat's baked in the middle.

Day Two Hundred and Ninety Nine
I made sausage rolls for movie night tonight and they turned out yummmmmyyy. I am glad I took them over there or else I probably would have ate every single one of them myself. We started watching a movie called After.Life, but it was so horrible we turned it off not even halfway through. We then started watching a bunch of shows on Netflix. Fun, relaxing night. :)

Day Two Hundred and Eighty Eight
And my baking streak continues. I made the most awesome ginger cookies today. I decided to call them Sandy Spice cookies for a few reasons:
Ingredients:
2 3/4 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon1 teaspoon ginger
1/4 teaspoon nutmeg
1/2 cup brown sugar, packed
1/2 cup white sugar
3/4 cup margarine or butter, softened
1 egg
1/4 cup molasses
- They are rolled in a combination of sugar and cinnamon before baking that makes them look sandy.
- My mom (aka Sandy) loves ginger cookies.
- My friend Sandra loves ginger cookies as well, and I am going to give her some for her b-day this past week when I see her tomorrow!

Day Two Hundred and Eighty Two
I made some yummy cookies today! Salted Caramel Chocolate cookies. They turned out really good and are totally non-healthy. I know, I know... I will work on making them a bit more healthy, but here is the recipe for now. :)
Salted Caramel Chocolate cookies
Makes approximately 24 cookies
1 cup butter, at room temperature
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon course sea salt
1/2 cup chocolate chips
1/2 cup white chocolate chips
1/2 cup chopped walnuts
8 caramels, chopped into fours
Cream butter, sugar, eggs and vanilla until fluffy.
Add flour, cocoa powder, baking soda and salt and mix until combined.
Fold in pecans, caramel pieces and chocolate chips.
Refrigerate dough for 4-6 hours (or more).
When ready to bake, preheat oven to 350, roll into balls and set on baking sheet.
(Note: refrigerating is the most important part. If you don’t refrigerate, when the cookies go into the oven, the caramel pieces will sink to the bottom and stick to the cookie sheet.)
Bake at 350 for 8-10 minutes.

Day Two Hundred and Seventy One
I made a yummy tie-dye cake for movie night tonight. I actually made it in two layers, but one of the layers fell apart :(
I used a recipe that suggested using Diet Sprite (or any clearish soda) and it came out a little heavier then I would have liked. It was pretty easy and fun to make. You just mix it in one big bowl and then add food coloring to the separate amounts. And then you just put one color at a time into the baking dish.
The frosting is yum! I mixed buttercream frosting and whip cream. And the finished product is very pretty! I think I might try making this as cupcakes next time.

Day Seventy One
I made cupcakes today and I used the bright fluorescent food coloring that I had from the cookies I made a month or so ago. The cupcakes turned out pretty good, but I think I can do better! The only problem now is I have a dozen cupcakes that need eaten! Diana stopped by to drop off my mail and said she would grab one to eat tomorrow. I wonder if I can freeze the rest?
On an even higher note, I received a letter from Z today! Appears things are going pretty awesome for him in basic training. I knew he would like it. :)

Day Forty
Today Riley and I went to go visit the Dana the dog walker and Riley's old gang. We had a blast hanging out and chatting. Well I did most of the chatting, Riley was busy playing. There were TONS of puppies everywhere. It was so much fun! I think we are going to go hang out there again on Thursday during lunch.

Earlier this morning while I was getting ready, Riley came over and sat on my lap. The photo is of me looking down at her on my lap. She is such a weirdo! How many dogs sit like they are human like that!

And to end the day I made some sugar cookies and decorated them for Valentines day. Aren't they pretty?! I made some specially decorated ones to take to Christa's tomorrow for movie night!

Day Thirty Four
It is Wednesday and that means... movie night with the Charter family! I brought the movie (Whip It) and dessert (cookies), and the Charters provided dinner (Jambalaya). It was as awesome as always hanging out with Christa, Scott, Callie, and Indy.
After the movie we spent time trying to come up with some really cool derby names like: The Mad Splatter, Clea Smack-Ya, and Betty Sock-Her! It is really awesome to have super cool friends to hang out with and just relax. :)
